Beef wellington is quite simple at its heart: rosy, tender beef fillet; a deeply savoury and earthy mushroom duxelles; maybe a pancake, or similar, to shield the beef, and crisp, burnished puff pastry. Madeira sauce; horseradish; maybe some truffle.
